I definitely fall into that category! Each season has a purpose but I always look forward to the promise of Spring after a long Winter. Spring has always been my second favorite time of the year (second to Fall!) because of the promise that the icy fingers of Winter will soon recoil. Throwing the windows open to allow the staleness of winter ebb free from our home is refreshing to the soul. It's something I long for once the daffodils start pushing up from the earth. 

Meal Plan

Spring is the perfect time for integrating fresh veggies into your meal plans.  In case you're new around here (Welcome!), breakfasts are simple and lunches are normally leftovers from the night before.Without further ado, here's my meal plan for the week:

Monday//Meatless Monday - Tuna Melts + Green Beans (Not quite meatless)

Tuesday//Taco Tuesday - Black Bean Quesadillas

Wednesday - Beef Stroganoff + Mixed Veggies

Thursday - Salmon + Quinoa and Broccoli

Friday - Chicken Fried Rice

Saturday - We're going to be all over the place so we'll probably have something easy like Sandwiches :)

Sunday//Leftovers - Whatever is leftover or munchies

Fresh Spring Recipes

I love food and especially love to try new things. However, I'm finding it difficult to dedicate a lot of time in the kitchen making recipes with labor intensive instructions. I do much better with recipes that don't have a long list of ingredients and directions. There will be a time in my life when I can "get fancy" with cooking again. In the meantime, I'm enjoying finding new recipes to add into our rotation that are tasty, healthy, and easy to put together!Here are some new ones that I've found that I look forward to trying. Hopefully you get a chance to give them a try as well.

If it's still cold where you are, remember that Spring is right around the corner and pretty soon the Earth will thaw and new life will bud. It's delightful watching the plants push up from the darkness of the ground, peeking to find the warmth of the sun and the morning dew.
