Meal Plan Monday {19 Oct - 25 Oct '15}

I recently received the Trim Healthy Mama Cookbook and Trim Healthy Mama Plan from my awesome Mother-in-love.  I've been perusing the books and have planned most of my dinners for the next couple of weeks using the THM cookbook!  I haven't started it yet until I get through the whole Trim Healthy Mama Plan but figured I could go ahead and try out some of the recipes.  I've known about THM for a while now and am excited to finally "jump on the band wagon" to see how it fits into our lifestyle.  From what I've read of the plan so far, I'm excited to see that it is compatible with two different eating habits.  I need to lose weight and my hubby needs to gain weight (I wish I could give him some of my flub!).  I've been wary about different types of eating plans because of our different needs but THM specifically addresses this need and provides ways to help!  Needless to say, I'm looking forward to when we can get started :)Here's our Dinner Meal plan for the week!  Maybe someday I'll get fancy with a THM chart or something ;)

Monday 19 OctCrockpot Balsamic Chicken (it's cooking in the crockpot as I type and it's smelling ahmayzing!) (THM) + QuinoaTuesday 20 OctMy Mom's Chili Recipe + Cornbread and Rice (I have a childhood friend and her parents (my second parents) will be visiting this day, yay! I normally don't have both cornbread and rice, but one person is gluten free so I'm going to make both)Wednesday 21 OctLeftovers (we have Prayer meeting on Wednesday nights so it's easier to eat leftovers before we go)Thursday 22 OctCrockpot Mexican Chicken (THM)Friday 23 OctCrockpot Cajun Crockpot Chicken (THM)Saturday 24 OctOne Pot Slim Sloppy Joes (THM) + Ceasar SaladSunday 25 OctLeftovers (I do very little cooking on Sunday's ;))As a refresher, our breakfasts are either toast, cereal, eggs, bacon, muffins etc.  Our lunches are almost always leftovers because I do my best to make enough for lunch for both of us :)What's on your meal plan for this week?
